What settings do you guys play on for the toughest challenge as a hitter?

This is my second go around with the game since no MLBPP09 and I want to have a good tough career.

I play on Novice with Powerful Pitching and Fielding. It's funny cause in the All Star game, it goes down a level as with Spring Training, so really no effort needed for me. I mean, it's easy to hit once you get used to it, but the pitching is unrealistic. I mean, you wouldn't pitch to a guy if he hit 3 homers in a row that same game, you know? So you actually end up with unrealistic stats after a couple years.

It's funny, because three times now my slugger (rookie, F B F+ D+ F) has been intentionally walked after I steal second base with the runner on first.
However, when I get him to steal third, they go back to pitching to me.

Is there a way to change difficulty after you start, it's greyed out whenever I go to it.
