I've noticed that a few of my players actually lose some of their ability in the off season. For example they go from a 5 Curve to a 4 Curve. Does this only happen with older players, if so, at what age to they start getting worse? Is there anyway to prevent it from happening?

Aging (with ill effects) starts at 35. Stamina is the biggest thing to fail for pitchers, and you'll start seeing issues with fielders as well.

Yeah, pitchers lost stamina fast, the comes control and pitches. Top speed is last.
Fielders usually start losing their run speed drastically, fielding is also lost, control is lost, and a bit of power. Those effects show immediately.

Not sure, I tested this out by maxing out a player and during season mode watch him wither and die on the free agent roster
